600g watermelon flesh, seeded
2 teaspoons lime juice
1/4 cup (60 g) caster sugar
1/4 cup (60 ml) citrus-flavoured vodka
Puree the melon and lime juice and sugar in a
blender, then pass through a fine sieve. Stir in
the vodka, and taste for sweetness, adding more
sugar to your personal taste. Pour into a shallow
1.5 litre metal time and freeze for an hour or so,
until it starts to freeze around the edges. Mix it
up with a fork, and repeat every half hour for 4
hours, until ice crystals have formed throughout.
To serve, beat with a fork then scrape into bowls or
shot glasses |
