Red Berry Compote


500g bag of frozen red berries

2/3 cup sugar

1 tsp vanilla essence

Place all ingredients in a small saucepan and bring to the boil, stirring occasionally. Allow to simmer 5 or so minutes, to reduce and thicken to a slightly jammy consistency, then serve hot or cold with any poultry or pork. (This also goes very nicely as a condiment with a cheese platter!)
