Another favourite from my 1997/98 menu at L'Office Cafe in the French Alps - this is very very rich but delectable. Try with a glass of crisp dry white wine to help cut through the cheese!
1 large onion, finely diced
1/2 red capsicum, diced
1 tsp minced garlic
2 cups thickly sliced field mushrooms
1 tbsp cracked black pepper
300ml white wine
300ml whipping cream
150ml milk
75ml honey
1/2 cup coriander, finely chopped
1 cup snow peas, sliced or whole
sea salt & ground black pepper to taste
1 1/2 tbsp parmesan cheese
1 1/2 tbsp grated cheddar cheese
1 1/2 tbsp fetta cheese
