Soften 1 litre of plain vanilla ice cream until it
is workable
(you don't want it to get too liquid though)
500g good quality chocolate drops, or a chocolate
bar chopped into small pieces or grated
2 tbsp (or more to taste) Voodoo Moon's GOLDEN
DRAGON Mango, habanero &
lemon myrtle salsa
Stir together well, then refreeze it in the same ice
cream tub, in a cake tin, or a bread loaf tin .
To serve, roll up scoops of the ice cream, or turn
out the cake or loaf tin (a little hot water on the
metal sides may help with this), and cut slices.
**Chef Shane's tip - This unusually spicy creation
is a real head-spinner at dinner parties, and will
work very nicely with a very sweet dessert wine -
perhaps a botrytis affected Semillon or similar.
Try serving the ice cream as a summer afternoon pool
party treat, or with a warm chocolate pudding
(superb with microwaved slices of Death By Chocolate
cake!)**
