Calypso satay sauce 

 

Every now and then I come up with something so yummy, yet so simple, that I honestly have to wonder why, oh why, didn’t I think of THAT before!  This is one of those – a 5 minute, throw-in-one-pot recipe which takes a basic sauce and makes it soooo sexy!

1 tbsp peanut butter (crunchy or smooth, its up to your taste)

1 tbsp chopped coriander

1 tbsp Voodoo Moon’s CALYPSO pineapple macadamia chutney

100ml coconut milk

Pinch sea salt

1 tsp Voodoo Moon’s GOLDEN DRAGON Mango, habanero & lemon myrtle salsa (optional for hot heads only!)

 Throw all the ingredients into a small pot, bring to the boil, stirring, until the sauce is well combined, and that’s it – ready to serve with hot or cold spring rolls, satay sticks, pork, chicken, drizzle over vegetable sticks as a kind of ‘gado-gado’ variation, or add a little extra coconut milk and use as a satay stir fry sauce!
