Welcome to the inaugural Voodoo Moon Newsletter. I’ll be keeping you informed of what’s happening, where to find us, profiling one of my products each month, and sharing a recipe or two for you to try. THE VOODOO MOON PHILOSOPHY OF FOOD We use only the freshest ingredients, sourced locally wherever possible, with no artificial flavours or preservatives. ARALUEN CHILLI FESTIVAL Speaking of chilli, February 15th and 16th saw the Araluen Chilli Festival, and what a huge success it was. It was our first major public appearance and I couldn’t have been happier with the response! It was a great opportunity to get our products out there, and to meet a lot of our customers personally. Feedback from you all was great thankyou for your comments, they’re always interesting and encouraging, so don’t be shy. We Have a Winner! Congratulations to the winner of our Araleun Botanic Park Chilli Festival competition Brad Grose of Beckenham. Brad came along to the Voodoo Moon tent at the festival for a tasting and entered the competition, coming up trumps with the prize of four jars of Voodoo Moon sauces well done! CHILLI MACADAMIA CARAMEL SAUCE If you were one of the many who left the Chilli Festival disappointed when I sold out of Chilli Macadamia Caramel Sauce, you’ll be happy to know that we are once again stocked up with this tasty number. Over the next month or so you’ll be seeing a lot more colour; some tasty and easy to prepare recipes; and something very special - a forum to enable you to “Ask Chef”. Eventually I’ll make an online database available with hints, tips, nutritional information and recipes for everyone to share. FIRE YOU CAN TASTEA dash of Seven Gates of Hell adds spice and flavour to any pasta sauce try it in your next Bolognese or Puttanesca sauce. Spread on a pizza base instead of a tomato sauce. Make sure Seven Gates of Hell is on the table at your next barbecue as a devilish alternative to tomato or barbecue sauce. Spread on bread to fire up your sandwiches. Splash it on a meat pie instead of tomato sauce. Serve as a dip with sausage rolls and party pies the next time you have mates round for a few beers to watch the footy. Simple Chilli Mussels 1 kg cleaned mussels Simply steam the mussels in a covered pot until they open wide, then drain well, reserving 2 tablespoons of the cooking stock. 1 jar Voodoo Moon Seven Gates of Hell sauce Heat the sauce in the pan with the two tablespoons of cooking stock which you have reserved, then gently stir the mussels through the hot sauce. Serve immediately with crusty bread and a sprig of coriander to garnish. Hint Choose a large mussel, pulling the flesh out with your fingers or a fork, careful not to break the shell open too far. Use this mussel as a pincer, or ‘claw’ to dig the flesh out of the rest! Seven Gates Garlic Cheese Bread Combine half a jar of Voodoo Moon’s Seven Gates of Hell with 2 tsp finely chopped garlic. Spread a piece of pita bread liberally with this mixture, then sprinkle with grated cheese. Warm under the griller or on your barbie plate until the cheese melts, then cut into wedges and serve, sprinkled with a little chopped parsley.

CATERING Our catering wing has been going from strength to strength, and we have a few big functions coming up. Our cocktail food menu is online at www.voodoomoon.com.au. Use this menu as a guide, as I specialise in designing specific menus to suit your own individual tastes, budget, style and needs. COOKING CLASSES Jo-Anne at Panache in Subiaco has invited me to present their inaugural cooking class in May. I’ll advise more details as soon as we finalise them. Also stay tuned for exciting news of regular barbecue cooking classes starting VERY soon in conjunction with Barbitec! ORGANIC MEALS You can now purchase Organic take home meals from Absolutely Organic, at 782 North Beach Road (corner of Karrinyup Road), Gwelup. These meals are made by Voodoo Moon, using almost entirely certified organic produce. (It’s just a couple of herbs and spices we’ve not yet managed to source organically) Much of the fresh vegetables being used are grown at Annie and Rick Dunn’s Absolutely Organic farm at Muchea. These meals are available fresh or frozen, along with a shop chock full of great tasting certified organic products. SPECIAL APPEARANCES You’ll be able to drop by for a free tasting of the Voodoo Moon range at Ballajura Rotary Club’s Annual Fair from 10am to 3:30pm Sunday 13th April, on the rear oval of Kingfisher Park, corner Illawarra Crescent and Kingfisher Avenue, Ballajura. I’ll be doing an in-store tasting at Fresh Provisions Claremont store between 6 and 8pm on Thursday 24th April. They’re located at the corner of Leura Ave and Stirling Highway, Claremont. Last but by no means least is the May Day Rally on Sunday 4th May, to be held at Fremantle Esplanade Reserve, Fremantle between 10am and 3pm. Hope to see you all at one of these dates.
