BUSH TOMATO KASAUNDI
A thick and rich mild tomato chutney with the zesty - almost sour - tang of Aussie Akudjura ground bush tomatoes.
The bush tomatoes are a great natural anti oxidant, and give a caramel/tamarillo flavour to the chutney, making it something very different and special indeed.
Some suggested uses:
A dip for satay sticks
Spread on any sandwich
Goes amazingly well with any cold meat or cheese - either alone or in a sandwich
A relish on a ploughman's lunch
Use as a tangy sauce perfect for chicken, pork or seafood
Drizzle over grilled barramundi and serve with Greek salad and new potatoes
Drizzle over proscuitto wrapped asparagus spears
Serve with poppadoms and a yogurt raita for a funky Indian starter with a twist
Marinate Kangaroo fillets before searing
Serve with any rich game meats such as venison or duck
