New Years Eve soiree's, charter boat cruises, or just about anything else you can think of. We can deliver food ready to go, supply chef and/or waiting staff, or even help you organise & and plan your function from the bottom up.

LEARN HOW TO COOK!

I am also available to run fun, tasty cookery classes - these are a great team bonding exercise, fun for a bunch of friends in the back yard, or purely educational for school or TAFE. I can create fun and educational cookery classes on whatever subject you choose for you and your workmates, friends or school/college class.

I specialise in classes teaching how to better take advantage of your barbecue,and am equally comfortable using your home kitchen to share my extensive knowledge and experience. All classes include loads of great food, unlimited Q & A session, and recipe handouts.

MY PHILOSOPHY ON FOOD - KEEP IT SIMPLE!

ENHANCE THE FLAVOUR OF YOUR FOOD - DON'T DISGUISE IT!

I try to always use fresh, top quality, local ingredients that complement
each other, and let the natural flavours of the food speak
rather than muddying a dish with too many clashing tastes. 

When creating any new dish my aim is to focus on simple clean flavours,and always make the end result greater than the sum of its parts - follow this rule and your palate will thank you for it!


 

MY BACKGROUND

After an early career in computing, I became a chef in my home town
of Perth in the early 90's.  Since then I've travelled extensively,
working my way through Europe, North America, Asia & Australia,
trying to immerse myself in local cultures and soaking up
different cuisines and regional flavours.

I spent a year as Head Chef of L'Office Cafe restaurant
in Argentiere, France (near Chamonix);
a year as Senior Sous Chef of the 4 Star Holiday Inn, Cambridge, England;
2 years with the Brass Monkey Brasserie in Perth, Western Australia;
as well as shorter stints at
the 100+ year old Sportsmans Inn, Killarney, Ontario, Canada
on the shore of Lake Huron's Georgian Bay;
Santorini, Greece;
The London Hilton on Hyde Park & Fortnum & Mason's 242's Cafe, both in London;
and The Ocean Spirit catamarans sailing out of Cairns, Queensland.


 
My personal favourite flavours to eat are seafood, Thai,
a great Caesar salad, the fantastically simple regional cuisines from
around the world which have been made from locally grown ingredients
for centuries, and any simple unpretentious food
made with love from quality ingredients.
 
My favourites to cook are the earthy and fragrant tones
of the Mediterranean, the cool & crisp flavours of South-East Asia,
and - of course - any chance to experiment with new taste combinations!
 
On those rare occasions I have some time off you'll find me enjoying
a live rock band (the local Perth music scene is incredible at the moment!),
slacking at the beach, or trying to avoid the tongs at a barbecue and drinks with friends.
